This Taco Soup Recipe is a hearty, one-pot comfort meal made with beans, corn, seasoned ground beef, and bold taco flavors. Ready in under 40 minutes, it’s perfect for busy weeknights, family dinners, or meal prep.
Ingredients
1 lb ground beef (or turkey/chicken)
1 small onion, diced
2 garlic cloves, minced
1 packet taco seasoning (or homemade blend)
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (15 oz) diced tomatoes (or Rotel with green chilies for spice)
4 cups chicken or beef broth
Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips
Instructions
In a large pot, heat 1 tbsp oil over medium heat. Add diced onion and garlic; sauté until fragrant.
Add ground beef (or turkey/chicken) and cook until browned. Drain excess grease if needed.
Stir in taco seasoning, mixing well with the meat and onions.
Add beans, corn, tomatoes, and broth. Stir until combined.
Bring to a simmer, reduce heat, and cook uncovered for 20–30 minutes.
Taste and adjust seasoning. Serve hot with toppings of choice.
Notes
For a vegetarian version, double the beans and add diced zucchini or bell peppers.
To make it spicier, use hot Rotel or add diced jalapeños.
Freezes well for up to 3 months; store in airtight containers.
