A creamy and comforting chicken soup made with garlic, sun-dried tomatoes, Parmesan, and herbs. This cozy recipe is easy, customizable, and perfect for weeknight dinners or family gatherings.
Ingredients
2 lb boneless skinless chicken thighs or breasts
2 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped (optional)
½ cup sun-dried tomatoes, chopped
6 cups chicken broth
1 cup heavy cream (or half-and-half for lighter)
½ cup Parmesan cheese, grated
1 tsp dried oregano
1 tsp thyme
¼ tsp red pepper flakes (optional)
Salt and pepper to taste
Pasta or gnocchi (optional, for variation)
Instructions
Season chicken with salt and pepper. Heat olive oil in a large pot or Dutch oven and sear chicken until golden on both sides. Remove and set aside.
In the same pot, sauté onion, garlic, carrots, and celery until softened. Stir in sun-dried tomatoes, oregano, thyme, and red pepper flakes.
Pour in chicken broth, scraping up browned bits. Return chicken to the pot and simmer until tender (about 20–25 minutes).
Remove chicken, shred, and return to pot. Stir in cream and Parmesan until smooth and creamy.
Add pasta or gnocchi if desired and simmer until tender.
Taste and adjust seasoning before serving hot with fresh herbs and crusty bread.
Notes
For dairy-free: substitute coconut milk for cream and skip Parmesan.
For extra veggies: add spinach, zucchini, or mushrooms.
For meal prep: store in the fridge for up to 4 days or freeze for up to 3 months.
