A creamy and comforting hearty cheddar garlic herb potato soup recipe made with tender potatoes, sharp cheddar, roasted garlic, and fresh herbs. Perfect for cozy nights and family meals.
Ingredients
6 medium Yukon Gold potatoes, peeled and diced
2 cups sharp cheddar cheese, shredded
4 garlic cloves, minced or roasted
1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
4 cups chicken or vegetable broth
1 medium onion, diced
1 cup heavy cream (or half-and-half for lighter version)
3 tablespoons butter
Salt and pepper, to taste
Instructions
In a large pot, melt butter and sauté onion and garlic until fragrant.
Add diced potatoes, broth, thyme, salt, and pepper. Bring to a boil, then simmer 20–25 minutes until potatoes are tender.
Lightly mash half the potatoes for creaminess.
Stir in shredded cheddar cheese until melted.
Add heavy cream and adjust seasoning.
Optional: chopped carrots, celery, parsley garnish, red pepper flakes
Notes
For a vegetarian option, use vegetable broth.
For a vegan option, replace cheese with plant-based cheddar and cream with coconut milk or cashew cream.
If freezing, leave out cheese and cream until reheating for best results.
