Ingredients
4 cups chopped kale (baby or Lacinato)
2 oranges, peeled and segmented
1 grapefruit, segmented
½ cup pomegranate seeds
1 tbsp honey (or maple syrup for vegan option)
3 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
Salt and black pepper to taste
Optional: sliced almonds, feta cheese, or avocado
Instructions
Prep the kale: Wash and chop kale leaves. Remove stems if needed.
Massage the kale: Drizzle a little olive oil over kale and massage gently for 1 minute to soften.
Mix the dressing: In a small bowl, whisk together honey, olive oil, lemon juice, and Dijon mustard until smooth. Season with salt and pepper.
Assemble the salad: Add citrus segments and pomegranate seeds to the kale. Drizzle dressing and toss gently to coat.
Serve: Top with optional almonds, feta, or avocado and enjoy fresh.

To prep ahead, store dressing separately and toss before serving.
