Description
This chicken lentil soup is hearty, protein-packed, and full of nourishing flavors. Made with tender chicken, fiber-rich lentils, and aromatic vegetables, it’s the perfect comfort food for cozy nights or meal prep.
Ingredients
1 lb boneless, skinless chicken thighs (or chicken breasts)
1 cup red lentils (rinsed)
1 cup green or brown lentils (rinsed)
1 large onion, diced
2 medium carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 can (14 oz) diced tomatoes (optional)
6 cups chicken broth
2 tbsp olive oil
1 tsp cumin
1 tsp coriander
1 tsp paprika
½ tsp turmeric (optional)
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Juice of ½ lemon
Instructions
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Sauté for 5 minutes until softened.
Stir in garlic and spices (cumin, coriander, paprika, turmeric). Cook 1–2 minutes until fragrant.
Add chicken thighs, lentils, diced tomatoes (if using), and chicken broth. Bring to a boil.
Reduce heat and simmer for 30–40 minutes, until lentils are tender and chicken is fully cooked.
Remove chicken, shred with two forks, and return it to the soup.
Season with salt, pepper, lemon juice, and fresh parsley.
Serve warm with bread or salad.
Notes
For extra creaminess, puree 1 cup of the soup with an immersion blender, then stir it back in.
Substitute coconut milk for cream if you want a dairy-free version.
