Ingredients

  • 1 lb boneless, skinless chicken thighs (or chicken breasts)

  • 1 cup red lentils (rinsed)

  • 1 cup green or brown lentils (rinsed)

  • 1 large onion, diced

  • 2 medium carrots, diced

  • 2 celery stalks, diced

  • 3 garlic cloves, minced

  • 1 can (14 oz) diced tomatoes (optional)

  • 6 cups chicken broth

  • 2 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tsp paprika

  • ½ tsp turmeric (optional)

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Juice of ½ lemon


Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add onion, carrots, and celery. Sauté for 5 minutes until softened.

  • Stir in garlic and spices (cumin, coriander, paprika, turmeric). Cook 1–2 minutes until fragrant.

  • Add chicken thighs, lentils, diced tomatoes (if using), and chicken broth. Bring to a boil.

  • Reduce heat and simmer for 30–40 minutes, until lentils are tender and chicken is fully cooked.

  • Remove chicken, shred with two forks, and return it to the soup.

  • Season with salt, pepper, lemon juice, and fresh parsley.

  • Serve warm with bread or salad.

Notes

For extra creaminess, puree 1 cup of the soup with an immersion blender, then stir it back in.

Substitute coconut milk for cream if you want a dairy-free version.
