Ingredients

Instructions
Step 1 – Season the Chicken
Pat the chicken dry with paper towels. Season both sides with salt, pepper, paprika, garlic powder, and onion powder.
Step 2 – Brown the Chicken
Heat oil or butter in a large skillet over medium-high heat. Add chicken skin-side down and brown for about 4–5 minutes per side until golden. Remove and set aside.
Step 3 – Make the Roux
In the same pan, melt 2 tbsp butter. Add flour and whisk constantly until golden brown (about 5 minutes).
Step 4 – Build the Gravy
Slowly whisk in chicken stock and then milk or cream until smooth. Stir in onions, garlic, thyme, salt, and pepper. Simmer 5 minutes until thickened.
Step 5 – Smother the Chicken
Return chicken to the pan, coating each piece with gravy. Cover and simmer over low heat for 25–30 minutes until the chicken is tender and cooked through.
